Apple Streusel Cake

Ingredients

For the cake

-3 1/2 cups all purpose flour

-2 teaspoons baking powder

-1/2 teaspoon baking soda

-1/2 teaspoon salt

-11 tablespoons unsalted butter

-1 cup sugar

-3 large eggs

-2 teaspoons vanilla extract

-7/8 cup buttermilk

-1/4 cup cinnamon sugar

-3 cored, peeled, and grated tart apples


For the Streusel

-1 1/2 cups flour

-3/4 cup brown sugar

-1/4 cup sugar

-1/4 teaspoon salt

-1 teaspoon cinnamon

-1/2 teaspoon nutmeg

-1/4 teaspoon cloves

-1/2 teaspoon vanilla

-8 tablespoons butter melted

-1 cored, peeled, and chopped tart apple


For the apple cider glaze

-1 cup powdered sugar

-1 1/2 tablespoon apple cider


Step 1

Preheat the oven to 375 degrees F. Lightly grease and flour a 9x9 inch baking pan.


Step 2

In a medium bowl, mix flour, baking powder, baking soda, and salt. Set aside. Measure buttermilk and vanilla together and set aside.


Step 3

In a large mixing bowl, beat together the butter and sugar until fluffy. Beat in eggs one at a time. Alternate adding the dry ingredients and the buttermilk vanilla mixture, starting and ending with the dry ingredients. Mix until batter is smooth.


Step 4

Fold grated apples and cinnamon sugar (1/4 cup sugar, 1 Tablespoon cinnamon) into batter.


Step 5

Make the streusel. Mix together all dry ingredients evenly. Melt butter and add in vanilla. Pour melted butter and vanilla over mixture and using your hands, mix until clumps form.


Step 6

Pour 1/2 cake batter into bottom of prepared cake pan. Smooth with offset spatula. Sprinkle 1/2 of streusel over batter until even layer forms. Chop remaining apple into 1/4 inch chunks. Layer 1/2 of apple over streusel. Pour remaining batter over apples. Smooth with offset spatula and repeat streusel and apple layering. Bake 40 minutes, until cake springs back when touched. Let cake cool.


Step 7

While cake bakes, stir together powdered sugar and apple cider.


Step 8

Drizzle apple cider glaze over cooled cake.
